This is a common point of confusion for sure; your “peak rating” is simply the highest RS you’ve earned throughout your seasons of play, so in that sense, the data is actually correct.
With that said, given that this issue comes up more often than we’d like, it may get changed in the future.

My peak was 6.5 One above all, not in eternity. I don’t understand why it doesn’t show one above all since that is my highest and most recent peak
Just came here to comment because I just experienced the same issue. Finished top 500/OAA again. Previously my profile was showing the correct information which was that my season 7.5 peak was 5328 for my rating. However, this morning after the season had already ended, it changed to show that my peak rating was 5275, which is incorrect and because of that 5275, it’s now showing my rank as peak Eternity. However, a quick check of the ranked leaderboards for Season 7.5 shows that I finished at 5328 as I do have the ranked crest. I made sure to finish my ranked run several hours ahead of leaderboard lock and that I was in a solid spot.
Edit: It now shows the correct peak rating, BUT still displays as Eternity, when even on the leaderboards I had been OAA long enough for it to update on Tracker. Not sure why it appears as Eternity on just my page.
